We are committed to doing things the hard way because it tastes better that way. Burgers smashed fresh to order, fries cooked hot and crispy every time, chicken hand-breaded, sauces made in-house, and no shortcuts behind the window.

El Pollo Feo began as a childhood dream for Josue (Josh) Martinez. Growing up, Josh and his siblings were lovingly called polluelos (“little chicks”) by their mother. That playful nickname eventually inspired the name El Pollo Feo, meaning “The Ugly Chicken.” Despite the name, the menu has been proudly beef-based until 2025, adding a fun twist to the story and keeping the humor from his childhood alive. Josh is a second-generation immigrant from El Salvador. His parents came to the United States in the late 1980s in search of their own American dream, and Josh is now the first business owner in his family. What started as a dream has grown into a fast-rising food truck brand in Whatcom County, with bold smash burgers, loaded fries, wings, and chicken sandwiches. His long-term vision is to open a brick-and-mortar restaurant in Whatcom County, one that continues to support the local food truck and trailer community while building opportunities for future generations.
